Torrijas are a sort of Spanish style French toast. Usually, torrijas are eaten during Easter and the Spanish Holy Week, as a sweet and delicious dessert. Now, discover a vegan alternative to this traditional Spanish dessert.

INGREDIENTS

  • 250 mL of organic Rice drink
  • 1 teaspoon of Steviat from Soria Natural
  • 3 slices of bread
  • 1/2 teaspoon of cinnamon powder
  • 1 teaspoon of vanilla extract
  • 4 Tablespoons of chickpea flour
  • 4 tablespoons of water
  • Red fruits to decorate

DIRECTIONS

  • Pour the rice drink, steviat, cinnamon and vanilla extract into a pot.
  • Heat the mix until the cinnamon and the sweetener are completely dissolved.
  • Put the bread slices on a tray and pour the mix from the pot. Make sure to soak them on both sides.
  • Then, blend the chickpea flour and water and coat the torrijas here.
  • Put the bread slices on an oven tray and cook for 10 minutes at 200ºC, turning them around when five minutes have passed, so they are cooked evenly on both sides.
  • Place the torrijas on a plate and add some red fruits.

You can use stale bread, transforming this recipe into one of left-over cooking.
